I can understand her wanting to play some defense. Her experiences with the Kuppler family haven't been ones to engender trust. Although she doesn't know it, Ein did kind of sell her out in the aftermath of Jacob's plane crash.
Another thought - Caitlyn's experience in Concord may indicate that Watch programming gives resistance to the crystal. If so, trying the crystal on Ein might be a way to check her for hidden Watch programming, to make sure she isn't a mole for Jakob. There's also the outside possibility that Ein did find Jakob and was programmed to forget having done so.
